Barrel-aged Cuvee Blend collab w/Nickel Beer Co

This 12.5% barrel-aged cuvee is our artful blend of some amazing barrels from our longer term (2+ year) portion of the cellar. This time we collaborated with the Tyson and Tom from Nickel Beer Co to create a fantastic balance of flavors from four beers each adding their own nuance to the final profile. This cuvee includes barrel aged: wheatwine, barleywine w/orange peel, doppelbock and scotch ale. The flavor profile leads with bourbon and oak richness without substantial hot fusels leading to a complex blend of dark caramel, dough/wheat, molasses and hints of dark fruits (date, fig) and orange peel.

Bourbon barrel-aged Chocolate Imperial Stout collab w/Gravity Heights

This 11.5% ABV Four Roses bourbon-barrel aged chocolate, imperial stout is amazingly smooth and enjoyable with background notes of oak, bourbon, toffee, chocolate and dark malts. This beer spent 18 months in the barrel sopping up all the goodness from these great barrels. The base beer was done with collaboration with the team at Gravity Heights.

Super Sticky (Shenanigans) Hazy IIPA

This 9% ABV Hazy Double IPA is a scaled up version of our popular Sticky Shenanigans using the same hops and general grains, but taking everything to the next level! We used Simcoe from the Pacific Northwest combined with massive amounts of New Zealand ‘s most sought after hops Nelson. This combination of hops creates bursting aromas and flavors of juicy tropical fruits with hints of pine. The mid-palate is fruity sweet and it finishes semi-dry with very low bitterness for a hoppy beer.

These amazing varieties impart a complex citrus, tropical fruit and hints of woodsy qualities we have come to expect in a modern IPA. We lowered the bitterness and use some hazy IPA techniques to maximize the flavor and aroma. The finish is crisp and dry and refreshing.
